Our American culture is so focused on sterility and everything antibacterial, that we have become detrimentally clean. Not that slovenliness is ok, but we have taken on the mindset that all microorganisms will make us sick. Not so!
After many years of feeling generally lousy I have been researching the benefits of probiotics, specifically the ones found in fermented foods. I was surprised to learn that the sterilized, irradiated food "THEY" were recommending I eat was actually not optimal for my health. The more research I did, the more I realized that my whole idea of eating was contrary to hundreds of thousands of years of human development.
So,,, I have decided to begin an adventure in fermenting my own foods, and want to share my experience!
